Minted Pineapple Relish

OK, this one was a total flop. Even the title “Minted Pineapple Relish” tells you it’s gonna be kinda gross. Why does General Foods think mint and pineapple go together? Not only that, but they call for the use of lime jello – my least favorite flavor. Blech.
I used a new mold. I won a bunch of molds on ebay last week, so you’ll be seeing some new shapes other than the bundt pan going forward. I may have put too much mint extract into the mix, because mint was the predominant flavor. The mint, lime and pineapple clashed. I mean, would you want a pineapple mojito? Dave only had a couple of bites. It was all he could stand – and he loves mint! I got through one serving for the sake of this blog but had to throw the rest out.
I think the photos speak for themselves. It looks like a mold of slime. Perhaps it would be a hit if you have a child who loves Nickelodeon? It did have somewhat of a relish texture, due to the crushed pineapple. There’s no joy in this particular jello mold.
